Ingredients for Banana Cake Recipe

1.5 cups of Bananas. (Bananas should be ripe and properly mashed)

3 cups of all-purpose flour

3 large eggs

2.25 cups of sugar

1.5 cups of butter milk

0.75 cup of butter (Make sure butter is softened)

1.5 tsp of baking soda

2 tsp of lemon juice

2 tsp of vanilla

0.25 tsp of salt

Cooking instructions for Easy Banana Cake

  1. Before starting the batter of the best banana cake, preheat oven to 275 degrees F
  2. Take a cake pan of 9 inches and grease it evenly.
  3. Take 1.5 cups of ripe mashed bananas and mix them with lemon juice in a small bowl.

    Make sure the bananas are properly mashed and no lumps are formed. Keep this small bowl aside for a while.
  4. Take a large bowl and add butter and sugar in the prescribed quantities. Mix butter and sugar till the mixture gets fluffy and very light in weight.
  5. Now take one large egg at a time and beat them with 2 tea spoons of vanilla into the butter and sugar fluffy batter.
  6. Beat all-purpose flour into the batter alternatively with buttermilk.
  7. Next add banana mixture with lemon juice into this batter and stir it well.
  8. Once everything is mixed together well.  Pour the batter in the already greased cake pan.
  9. Bake the cake pan in preheated oven for almost 60 minutes.
  10. Test the cake with tooth pick.  Insert a toothpick in the centre of the cake, if it comes out clean then cake is properly baked and if it comes out sticky with the cake batter then it needs more baking time.
  11. Once the baked cake pass the toothpick test, remove it from the oven and place the cake pan directly in freezer for about 45 minutes.

Ingredients required for cheese frosting on banana cake

1 package cheese cream (make sure the cheese cream is softened)

3.5 cups of icing sugar

0.5 cup of butter (softened butter required here)

1 tsp of vanilla

Walnuts for garnishing.  Prefer chopped walnuts.

Cooking Instructions for the frosting and garnishing for baking your Simple banana cake

  1. Take a bowl and mix softened butter and cheese cream in one direction until it becomes very smooth.
  2. Also beat in one teaspoon of vanilla essence.
  3. Next add icing sugar to the bowl and mix it well on a low speed but in same one direction. Continue mixing it and gradually increasing your speed to make the frosting very smooth.
  4. Take out the cooled cake from the freezer and spread evenly and smoothly on the cake.
  5. Chop walnuts in the size of chunks you prefer and sprinkle all over frosting on the cake.
  6. Slice the cake and serve with a wide smile.

Eggless variation of Banana Cake Recipe

Many may prefer indulging in sweetness of eggless banana cake.  You can follow the same recipe as above by making few changes in ingredients.

In order to exclude egg from the ingredient list, we need to add proportion of oil / butter in the above recipe; this will maintain the lightness of the cake. The next challenge of keeping out eggs is to maintain the fluffiness or softness of the cake. Increase the quantity of mashed bananas by a bit and enjoy your soft moist banana cake.

Notes

 Placing Banana cake directly in freezer right after taking it out from the oven will make the cake moist and more tempting.
