How to determine whether it is fresh
To know whether your Tempeh is in good condition or spoiled, you can try to smell it.
It should give you the sweet aroma like mushroom and it should be dry and white. Black spores can be spotted if it's not fresh or fermented for too long.
How long your raw Tempeh from the market can be kept
If you freeze it, it can be kept up to 4 to 6 months. After thawing, tempeh can be kept about 10 days in refrigerator.
Consumption method
Unless it is pre-cooked upon purchase, it must be cooked before serving. It serves well with almost any kind of recipes. It can be broiled, baked, pan-fried or grilled. For moist heat method, you can boil or steam it, poach or simmer it. Personally, I prefer pan-fried method. The outside is golden crispy but retain the soft texture inside. It can absorb the aroma of the herbs or sauce easily. The fastest way to cook it is to put the marinated tempeh in a microwave (add some water but not too much. Avoid diluting the marinated flavour)and heat for 5 minutes.
Ideal combinations:
1. Stir fry tempeh with beans and any vegetables
2. Grill tempeh with fruits or with BBQ sauce.
3. Mix with mayonnaise and prepare it as salad.
4. Marinate with soy sauce and seasonings for oven-bake.
