Calabaza and maluggay health benefits

Calabaza or kalabasa is popularly known as squash. It is recognized for its vitamin A benefit. However, calabaza is also a good source of vitamin B1, vitamin B2, niacin, vitamin C, calcium, phosporous, iron, magnesium and phosphorus.

Malunggay or moringa is also rich in vitamin A. But, it is said to contain more beta-carotene than carrots. Compared to oranges, maluggay is also cited as a richer source of vitamin C and has higher potassium content in comparison to bananas.

Maluggay is rich in calcium, with a concentration higher than milk. More to this, malunggay is an excellent source of zinc and essential amino acids.

Preparing Calabaza and Malunggay in Creamy Sauce Pasta

To cook Calabaza and Malunggay in Creamy Sauce Pasta, the following ingredients are required:

2 cups of calabaza or squash, boiled and mashed
1 cup of all purpose cream
1 cup of evaporated milk
½ cup diced cooked ham
½ cup cooked chicken shredded
2 cups of chicken broth
1 tbsp. of garlic, minced
1 medium onion, diced
100 grams grated cheese
2 tbsp. butter
Malunggay leaves, chopped
Salt and pepper
500 grams of spaghetti noodles (cook it as package direction)

Procedure:

  1. Heat butter in a sauce pan. Add the onion, ham and chicken.
  2. Add the mashed calabaza, all purpose cream, evaporated milk and chicken broth. Stir constantly until it blends all the ingredients.
  3. Add the cheese and the malunggay leaves. Simmer for 10 minutes.
  4. Pour the sauce in the pasta and serve.

Calabaza and Malunggay in Creamy Sauce Pasta is an easy-to-do recipe. It is also a good meal to encourage children to eat vegetables.
