INGREDIENTS
Rice- 1 Cup
Split black gram skinless (Dhuli Urad dal)- 1/4 Cup
Skimmed Milk Yogurt- 1/4 Cup
Ginger Paste- 2 Tbsp
Green Chili Paste- 1 1/2 Tbsp
Soda Bicarbonate- 1/2 Tbsp
Lemon Juice- 1 Tbsp
Green Chutney- 1/2 Cup
Salt to taste
Coriander leaves- 2 Tbsp (Chopped)
Method of Preapration
Take rice and dal and dry-roast both of them over medium heat for four or five minutes. Keep them aside for cooling. When done grind both rice and dal into a moderately coarse powder. Empty the powder into a medium sized bowl.
Now add yogurt and one and a half cups of warm water. Mix thoroughly till it becomes a smooth batter of pouring consistency. Add salt and stir well. Leave the batter to get fermented for eight to ten hours or for a night. When done it means when the batter appears to be raised add ginger paste and green chili paste to it and mix well.
In a pressure cooker take about ½ glass water and boil it. Separate half the batter in another bowl. In the remaining batter add one-fourth teaspoon of soda bicarbonate and half tablespoon of lemon juice. Whisk it well but only in one direction. Take a thali or a widely open bowl and grease it with some coking oil and pour the batter into it. Place the bowl or thali in the pressure cooker carefully. Cover with lid without weight on it. Steam the batter for eight to ten minutes. After that check whether it is done or not with a knife. Prick the centre with a knife if the knife comes out clean, it is cooked. Take the bowl out of the cooker and spread green chutney over the cooked portion of dhokla while hot. Repeat the procedure done earlier with the remaining batter just before putting it into the cooker or steamer. Empty the remaining batter over the chutney which was spread earlier on the cooked portion and steam it for ten minutes. Check it again and remove from the cooker, slightly cool it and garnish with coriander leaves. Sandwich dhokla is ready to eat now cut the dhokla into desired shapes and serve hot.
