Ingredients for Making Vegetable Poha:

Thick Poha- 1 1/2 cup
Onion- 1 Small Size (Finely Chopped)
Green Chilies- 2 (Cut Lengthwise)
Carrot- 1 Big (Diced)
Green Peas- A Fistful (Can Use Frozen Indian Peas)
Curry Leaves- Few (Chopped)
Mustard Seeds- 1/2 Tbsp
Peanuts- Fistful
Turmeric Powder- 1/8 Tbsp
Coriander Leaves- Few (Finely Chopped)
Shredded Coconut- 2 Tbsp (Optional)
Oil- 1 tbsp

Method of Preparing Vegetable Poha:

Wash Poha and soak in water for few minutes or simply just wash poha in running water in a strainer for about 2 min. Remember that poha should no be overdone as in that case it the grains will become soggy and will not taste and look good. Let the poha rest in the strainer and now start off with the vegetable cutting.

Add oil in heated pan, add the mustard seeds and let the mustard splutter. Now add peanuts and fry them until the peanuts get crunchier. Put in onion, green chilies, turmeric powder, curry leaves and sauté until the onion turns translucent. Add the carrot and when carrot is 3/4th cooked add peas and some salt. By this time poha will be ready to add. Add it to the vegetables with the remaining salt needed. Stir at low heat very carefully, so that the grains are not broken. Add coriander leaves, just before switching off the stove.
Switch off the gas and add the shredded coconut and stir once. Serve it hot. You can enjoy vegetable poha with tomato ketchup or green chutney.
